Cooking with Blanched Roasted Peanuts
Try making your own peanut butter – it will only take 5 minutes – it’s just so easy!
Blitz 2 cups of raw peanuts in a processor for 4-5 minutes. You’ll see the transformation from crumbs, to a dry ball, to a thick paste and then to a runnier paste – just stop when it looks like the right consistency for you. Then add 1-2 tbsp oil and a pinch of salt and mix.
It's far healthier, tastier and cheaper than store-bought peanut butter in my opinion. Keep this in the fridge though as it doesn’t have any preservatives. It should keep well for a good few weeks.
You could make a peanut sauce to dollop over rice, quinoa or veggies, add to a soup, use for baking – think brownies! Or eat them just as they are.
