Coconut products make a great alternative to dairy creams and butter.
The milk is an excellent base for smoothies, soups, and curries; the oil can be used in place of cooking oil - I roast my veggies in coconut oil and fry them in it and often have coconut water after a workout.
What is Desiccated Coconut?
Desiccated coconut is unsweetened, very finely ground coconut flesh with a subtle sweetness and most of the moisture removed. It is different to coconut flour, which has the fat removed.
How To Cook Desiccated Coconut
It is ideal for use as a topping for curries or other Asian dishes, as an ingredient in baked goods and granola.
The taste of desiccated coconut takes another level when you toast it - spread it out on a tray and bake in the oven at about 160 degrees for 10 minutes until it just starts to brown. Now sprinkle this over a bowl of berries, yoghurt or porridge.. delicious!
You can also try toasted coconut as an alternative to breadcrumbs when breading chicken or fish or add it to frozen bananas and blend until smooth for a twist on coconut ice cream.

This is some of the tastiest desiccated coconut we’ve tried. Fresh, creamy and crunchy, it is delicious mixed into breakfast.
Warmly recommend this Organic Desiccated Coconut Lovely for baking, as well as the porridge in the morning or on top of a dahl for dinner. The flavour is sweet and slightly toasted the best I’ve tasted!
