What Are Red Fox Carlin Peas?
Red fox peas are a red-brown variety of the carlin pea and have a delicious nutty flavour.
They make an excellent British substitute for chickpeas or puy lentils. They work well in soups, stews, curries and salads, and are a great accompaniment to roast vegetables.
Cooking Red Fox Carlin Peas
Soak overnight, or quick-soak by placing in boiling water, taking it off the heat and leaving for one hour. Then rinse, cover with water and bring to the boil. Simmer (covered) for 40 to 45 minutes until tender.
